This exclusive event, hosted in the elegant Sky Lounge, promises an enchanting fusion of exceptional wines and delectable dishes, meticulously crafted to complement each other.

The evening includes five Pepperjack wines, served alongside a perfectly paired five-course meal. Winemaker Richard Mattner will talk through each drop, providing a unique insight into these classic wines.
Course 1
Pepperjack Sparkling Chardonnay Pinot Noir NV (SA) and house-smoked trout on croute.
Pepperjack Sparkling carries a wonderfully creamy mousse and slips effortlessly onto the palate with a lively fresh citrus attack that mellows to a full & creamy mid palate that lingers long.
Course 2
Pepperjack Sauvignon Blanc (TAS & Limestone Coast) & prosciutto wrapped grilled asparagus and roasted capsicum with semi dried tomato.
Pale straw in colour with a palate that is refreshing, textural and layered demonstrating flowers of citrus and grapefruit pith with freshly crushed nettle, complemented by subtle lychee notes and mineral chalk. The palate is refreshing, textural and layered demonstrating flavours of citrus and grapefruit with mouth-watering acid the finishes clean and soft with great persistence. Best enjoyed now slightly chilled.
Course 3
Pepperjack Grenache (McLaren Vale & Barossa) and char sui pork belly black baos with shaved carrot and fresh chilli.
A medley of lifted aromas of fresh fruits of dark cherry, mulberry and ripe raspberries. The Palate shows flavours of ripe raspberry and cranberry fruits with silky tannins which give length adn finesse while finishing soft and full of flavour.
Course 4
Pepperjack Malbec (Mendoza, Argentina) and lamb rump with sautéed chard, rosemary roasted kipfler potato, bearnaise sauce and lamb jus.
This Deep dense black colour Malbec with a red huec has Aromas of violets, spice, ripe blueberries and boysenberry, with hints of mocha oak. The palate shows fresh fruits of red cherry, fresh cranberries with savoury chalky tannins which give length and finesse. Winemaker, Richard Mattner, travelled to Mendoza, Argentina to source the grapes – ensuring the Pepperjack style and quality was not going to be compromised.
Course 5
Pepperjack Sparkling Shiraz (Barossa) and dark chocolate brownie with spiced poached pears and vanilla mascarpone.
The bold and concentrated fruit flavours of this Pepperjack Sparkling Shiraz make it the perfect partner for special occasions. A modern take on an Australian classic, this stylish Sparkling Shiraz is wonderful when enjoyed with friends and family.
