Coldstream Hills 7-Course Degustation and Wine Dinner – SOLD OUT

Join us for the ultimate wine and dine experience, showcasing wines from Coldstream Hills, presented by Treasury Wines. Hosted by Robert Wilkins from Treasury Wines, enjoy a carefully curated 7-course degustation dinner accompanied by a selection of five Coldstream Hills wines. Coldstream Hills’ suite of winemaking and viticultural techniques aims to express the individuality of the vineyards and showcase the pedigree of the Yarra Valley.
The evening begins with a 2016 Chardonnay Pinot Noir, which features attractive toasty, bready aromas with underlying lemon fruit characters that entice the nose. A fine style of sparkling wine, youthful lemon characters with mid palate texture from the pinot noir. The finish is crisp & balanced, with fine acidity. This is matched with two canapés – Bass Strait Sea scallop in the shell with sabayon and chicken parfait on crisp bread croute.
The next course is house smoked salmon with roe pearls, micro chard and crème fraiche, paired with the 2022 Chardonnay. The Chardonnay’s aroma is full of attractive stone fruit characters of white peach & nectarine, with citrus overtones. The palate is elegant and balanced classic flavours of white peach with citrus & quince in the background.
Following this, we serve the next course of duck breast with pomegranate glaze and target beetroot crisp, and the 2021 Deer Farm Pinot Noir. The wine’s palate is elegant, complex and long with silky texture and a fine, powdery tannin finish. Red berry fruits of strawberry, cherry and raspberry are evident with underlying spice and savouriness.
2018 Reserve Shiraz is served with the next course, where the aroma is fragrant and delicate with rose petal and plums and underlying hints of black pepper and spice. It’s medium bodied in style with a silky structure, dark plum and cherry characters dominate with attractive spice to finish. Accompanying this wine is beef short rib braised in tomato and cold stream shiraz served with polenta, grilled broccolini and cauli blossom.
Following this is a palate cleanse of lemon sorbet with fresh lime & mint. The final wine of the night is a Sparkling Rosé, which has an attractive strawberry blush colour. It features vibrant lemon and fragrant berry aromas with hints of rose petal. The palate is fine and balanced with crisp acidity. Paired with this wine is a citrus bavarois with a strawberry consommé with petal tuille.
To close the night, we serve our chef’s selection of petit fours, along with espresso coffee and herbal tea.
